Perfect for a mezze platter. For a smoother pate, double the bread quantity and increase the oil until your reach the desired consistency.
Ingredients
- 1 French stick
- 1½ cups fresh or toasted walnuts
- 50 grams feta cheese
- 1 tsp ground cumin
- 1 tsp minced fresh garlic
- 1 tblsp sundried tomato paste
- ¾ cup olive oil
Method
- Tear the soft centre from the french stick and place in a food processor with the walnuts, feta cheese, cumin, garlic and tomato paste. Process until well chopped.
- With the motor running gradually pour down the olive oil until the mixture forms a thick paste. Season with salt and pepper.
