Eating out by the beach is part of summer every year we seek out new ideas to take in the picnic basket. This upside down pizza is a great idea for picnic fun this year.
Ingredients
- baking paper
- oil for brushing (olive is nice)
- 4-5 anchovy fillets, halved lengthwise
- about 16 olives (green or black)
- ½ cup shredded fresh parmesan cheese
- 8-10 cherry tomatoes, halved
- 6 artichoke hearts in oil, well drained and thickly sliced
- 8 slices of salami or shaved ham, roughly cut
- 2 sheets pre-rolled puff pastry
Method
- Cut a 25cm circle of baking paper and place in the base of a 25cm spring-form cake tin. Brush lightly with oil.
- Loosely arrange sliced anchovy fillets, olives, parmesan cheese, cherry tomatoes, artichoke hearts and salami on top.
- Place the pastry sheets one on top of the other, on a lightly floured board and roll out together to make a 27cm circle.
- Cover filling with pastry, tucking the edges in and around the edge of the cake tin.
- Bake at 220°C for 15-18 minutes or until golden and well risen.
- Remove from oven and leave to set for a few minutes, before turning upside down on to a serving plate.
- Serve with fresh salad leaves and oregano.
