Ingredients
- 3 cups flour
- 1 teaspoon each salt and pepper
- 2 tablespoons baking powder
- 1¼ cups grated cheese
- ¼ cup tomato paste (sundried or plain)
- 2 eggs
- 1½ cups milk
- ½ cup yoghurt
- ½ cup oil
- ¼ cup each diced black olives and sundried tomatoes
- ¼ cup chopped parsley or celery leaves
Method
- Sift the flour, salt, pepper and baking powder into a bowl. Stir in one cup of the cheese.
- Mix together the tomato paste, eggs, milk yoghurt, oil, olives, sundried tomatoes, parsley or celery and fold into the dry ingredients.
- Divide evenly among 12 well-greased muffin tins and top each with a little of the remaining cheese.
- Bake at 200ºC for 18-20 minutes until golden and cooked. Serve hot.
