Onions cooked until soft and glazed with sugar and spices are an ideal base for this tofu dip. Try it with crostini or with crudities.
Ingredients
- 2 large onions, peeled
- 1/4 cup olive oil
- 1 tblsp minced fresh garlic
- 1 orange (grated rind and juice)
- 1/2 tsp ground coriander
- 1/2 tsp mixed spice
- 1/2 cup brown sugar
- 250 grams soft tofu
- salt and pepper to season
Method
- Thinly slice the onions.
- Heat the oil in a large frying pan and add the onions and cook over a moderate heat for 15 minutes until the onions are soft.
- Add the garlic, orange rind and juice, coriander, mixed spice and brown sugar and cook a further 10 minutes until the mixture is thick. Cool.
- Puree half the cold onions with the tofu until smooth. Season with salt and pepper to taste. Place into a serving dish, cover and chill for 30 minutes before using.
- Serve the remaining onion marmalade on the side too.
