This salad is delicious served with my recipes for Thai Pork Burgers.
Ingredients
- ½ x 400 gram can mango slices, well drained
- 1 carrot, peeled and grated or julienne
- ½ cucumber, halved and sliced
- 2 spring onions, finely sliced
- ½ cup roasted peanuts
- ¼ cup chopped coriander, chives and or basil
- 2 red chillies, deseeded and sliced
- 2 tblsp finely shredded lemon grass
handfuls mixed salad greens
- Lime Dressing
- 2 tsp minced fresh ginger
- 1 tsp minced fresh chilli
- 1 tblsp caster or grated palm sugar
- ½ lime, quartered, deseeded and chopped
- 1½ tblsp Thai fish sauce
- ¼ cup water
Method
Salad
- Cut half the mangoes into thin slices.
- Toss all the remaining ingredients together with the dressing. Serve soon after making.
Dressing
- Put all the ingredients into a mini food processor and process until well mixed.
Cooks Tips
When cooking with lemon grass, use the white party only. The long lemon grass stems can be used to make a tisane. Just place in a tea pot with boiling water and stand for 5 minutes.
