Ingredients
- 2-3 spring onions, trimmed and sliced diagonally
- 2 sticks celery, sliced diagonally
- 1 telegraph cucumber, deseeded and sliced diagonally
- 400 grams can mangoes, drained and sliced
- 140 grams packet crispy noodles
- 1½ tblsp each chopped fresh mint and coriander
- 3 tblsp Thai fish sauce
- ¼ cup fresh lime juice
- 2 tsp caster sugar
- 1 tsp grated fresh ginger
- ½ tsp minced chilli paste
- ½ tsp minced garlic
- 1 tsp oil
- 500 grams boneless salmon fillet
Method
- Combine ginger, chilli and garlic with the oil and spread over salmon. Marinate for 10 minutes.
- Fan grill at 180°C until just cooked. Cool. Break up into 3-4cm pieces.
- Combine spring onions, celery, cucumber, mango and crispy noodles. Toss with the dressing, pile salmon pieces on top. Serve.

- Mix the ingredients together.
