Ingredients
- 500 bag frozen broad beans
- 1 onion, peeled and finely chopped
- 1 swede, peeled thickly and finely chopped
- 2 tsp minced fresh garlic
- 25 grams butter
- 1½ tblsp Thai green curry paste
- 1 litre chicken or vegetable stock
- ½ cup broken instant noodles
- 2 tblsp chopped fresh coriander
Method
- Blanch and peel the beans.
- Cook the onion, swede, and garlic in the butter in a large saucepan over a moderate heat for 5 minutes.
- Add the curry paste and cook 1 minute.
- Stir in the stock, beans and noodles and simmer for 5 minutes until tender. Sprinkle in the coriander just before serving.
