Thai Bean Broth

Thai Bean Broth

Ingredients

  • 500 bag frozen broad beans
  • 1 onion, peeled and finely chopped
  • 1 swede, peeled thickly and finely chopped
  • 2 tsp minced fresh garlic
  • 25 grams butter
  • 1½ tblsp Thai green curry paste
  • 1 litre chicken or vegetable stock
  • ½ cup broken instant noodles
  • 2 tblsp chopped fresh coriander

Method

  1. Blanch and peel the beans.
  2. Cook the onion, swede, and garlic in the butter in a large saucepan over a moderate heat for 5 minutes.
  3. Add the curry paste and cook 1 minute.
  4. Stir in the stock, beans and noodles and simmer for 5 minutes until tender. Sprinkle in the coriander just before serving.
