Ingredients
- 500 grams lean beef mince
- ½ cup chopped dried apricots
- ½-1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 2 tablespoons chopped fresh coriander or parsley
- ½ cup fresh breadcrumbs
- 1 egg
- Tagine
- 1 onion, diced
- 2-3 teaspoons minced ginger
- 1 teaspoon each minced garlic and chilli
- 1½ teaspoons ground cumin
- ½ teaspoon ground cinnamon
- 3 firm ripe pears, thickly sliced
- ½ cup green olives
- 2 cups beef stock
Method
- Mix together the meat ball ingredients and shape into 30 small meatballs. Brown in a dash of oil in a lidded frying pan. Set aside.
- Pan fry the onion with the ginger, garlic, chilli, cumin and cinnamon until soft. Add the pears, olives, beef stock and meatballs and cover.
- Simmer gently for 30 minutes. Serve with couscous and fresh coriander or parsley to garnish if wished.
Cooks Tips
- Use a mix of half lean minced beef and lamb. - Add a tablespoon of quince paste or honey at the end of cooking for delicious sweet flavour. - Canned pears can be used in place of fresh.
