Ideal with fish, chicken or pork.
Ingredients
- 1 teaspoon grated fresh ginger
- 1 teaspoon minced chilli or sambal oelek
- 1-2 teaspoons chopped fresh mint
- 1 tablespoon chopped fresh coriander
- 1 tablespoon chopped fresh lemongrass
- 2 teaspoons grated palm sugar
- 1 tablespoon olive oil
- 2 tablespoons each lemon juice and Thai fish sauce
Method
- Mix together the ginger, chilli, mint, coriander, lemongrass, palm sugar, olive oil, lemon juice and fish sauce.
- Toss through the chosen meat or fish in the marinade in a resealable bag or turn in a non-metallic dish. Cover and marinate as required. For fish allow 45 minutes in the refrigerator, for other meats, allow 2-3 hours in the refrigerator.
