Ingredients
- 125 grams butter
- ¾ cup caster sugar
- 3 grated rind lemons
- 1 egg
- ½ cup sour cream
- 1¾ cups self-raising flour
- ¼-½ cup mixed peel
- ¼ cup milk
- 2 tblsp lemon juice
Method
- Beat the butter, sugar and lemon rind to a cream. Add the egg and beat well.
- Beat in the sour cream. Fold in the sifted flour and peel alternately with the milk and lemon juice.
- Spread into a well-greased and floured 10 cm x 20 cm loaf tin.
- Bake at 180°C for 40 minutes until cooked when tested. Stand 5 minutes before turning out on a cake rack to cool. Ice with lemon icing if wished.
