With eggs on hand you can always make an easy meal like this rather flash looking roulade.
Ingredients
- 50 grams butter
- 4 tblsp flour
- 1 cup milk
- 4 eggs, separated
- ¾ cup grated cheese
- 2 cups rocket leaves
Filling
- 250 grams cottage or ricotta cheese
- 250 grams boneless smoked fish
- 2 tblsp chopped fresh chives
Method
- Melt the butter in a saucepan, add the flour and cook over a medium heat for a minute. Remove from the heat and gradually stir in milk. Return to the heat and cook until the mixture is thick. Simmer for 1-2 minutes. Remove from heat.
- Add the egg yolks and grated cheese to the sauce and season with salt and pepper.
- Beat the egg whites until soft peaks form. Gently fold into the sauce mixture. Pour into a well-greased and paper-lined Swiss roll tin.
- Bake at 200ºC for 12-15 minutes or until golden brown.
- Turn onto a wire rack covered with a tea towel. Remove the paper lining. Spread with the rocket leaves and cover with the filling. Hold the tea towel firmly with both hands and gently roll up the roulade. End with the join underneath. Serve soon after making. Cut in thick slices and drizzle with a little olive oil.
Filling
- Beat together cheese, smoked fish and chives. Season with pepper.
