Ingredients
- 1 cup baby frozen peas, defrosted
- 200 grams cold smoked salmon, diced
- 2 tblsp chervil or parsley, chopped
- 8 eggs
- 1 tsp mustard
- 100 grams bocconcini cheese
- sundried tomato mayonaise
- ¾ cup mayonaise
- 1-2 tablespoons sundried tomato paste
Method
- Preheat the oven to 180ºC. Grease and line 8 muffin tins with baking paper.
- In a clean bowl beat eggs with mustard. Add the peas, smoked salmon, chervil or parsley and season with salt and pepper.
- Pour the mixture into the prepared muffin tins. Place a slice of bocconcini on top of each muffin.
- Bake in the preheated oven for 20-25 minutes or until the frittatas are well-risen and just firm to touch.
- Serve with sundried tomato mayonaise.

- Mix together the mayonaise and sundried tomato paste.
