Roasted Vegetable Wraps

Ingredients

  • 6 spinach tortillas
  • 2x 200 gram pots of Baba Ganoush
  • a selection of freshly roasted vegetables (roast pumpkin, parsnip, red onion, zucchini)
  • 200 grams blue cheese
  • 500 grams tabbouleh

Method

  1. Warm tortillas in microwave for approximately 10-20 seconds.
  2. Spread with babaganoush, then a layer of roasted vegetables on top.
  3. Cut the cheese into pieces and place on top of the vegetables with a spoonful of tabbouleh salad. Roll up securely to eat.
