Ingredients
- 650 grams orange kumara, peeling and cut into chunks
- 2 rashers bacon, roughly diced
- 70 grams walnuts
- 2-3 tblsp fresh thyme
- 3-4 tblsp olive oil
Method
- Bring a large saucepan of salted water to the boil, parboil kumara for 4-5 minutes. Drain well.
- Toss together the kumara, bacon, walnuts, thyme and olive oil.
- Place on an oven tray and bake near the top of the oven at 180ÂșC for 15-20 minutes until the kumara is golden and tender. Serve garnished with more thyme and a little grated lemon or orange rind if wished.
