Roast Kumara

Roast Kumara

Ingredients

  • 650 grams orange kumara, peeling and cut into chunks
  • 2 rashers bacon, roughly diced
  • 70 grams walnuts
  • 2-3 tblsp fresh thyme
  • 3-4 tblsp olive oil

Method

  1. Bring a large saucepan of salted water to the boil, parboil kumara for 4-5 minutes. Drain well.
  2. Toss together the kumara, bacon, walnuts, thyme and olive oil.
  3. Place on an oven tray and bake near the top of the oven at 180ÂșC for 15-20 minutes until the kumara is golden and tender. Serve garnished with more thyme and a little grated lemon or orange rind if wished.
