Ingredients
- 1 slice pre-rolled puff pastry
- ¼ cup mascarpone or spreadable cream cheese
- 4 canned apricot halves with 2 tablespoons syrup
- about ¼ cup chocolate chips or chopped chocolate
- 2 tablespoons brown sugar
- 1 tablespoon crystallised ginger
Method
- Cut the puff pastry into 4x 10cm circles and place on a greased baking tray.
- Spread each circle evenly with the mascarpone or the cream cheese.
- Slice the apricots and arrange on top.
- Scatter the chocolate over the tarts. Sprinkle with the sugar.
- Bake at 220ºC for 12 minutes until the pastry is golden and well risen.
- Mix the crystallised ginger with the syrup and brush the top of the apricots before serving.
