Ingredients
- 500 grams chicken tenderloins
- ¼ cup olive oil
- 2-3 tblsp finely chopped celery leaves or parsley
- 1 tblsp finely chopped fresh thyme
- ½ tsp each salt and freshly ground black pepper
- 100 gram finely sliced prosciutto
To Accompany
- extra virgin olive oil
- balsamic vinegar
- ½ tomato deseeded and finely diced
Method
- Place the chicken tenderloins, olive oil, celery leaves, thyme, salt and pepper into a bowl. Cover and allow to marinate at room temperature for 30 minutes.
- Loosely wrap a slice of prosciutto around one, chicken tenderloin. Secure with a small skewer. Repeat with remaining ingredients.
- Cook in a hot non-stick frying pan for about 6-8 minutes turning occasionally until well browned and cooked.
- Serve drizzled with olive oil and balsamic vinegar and deseeded tomato.
