Ingredients
- 1 kg shelled prawns
- 2-3 Tbsp butter or oil
- salt and pepper to season
- 4 avocados
- 1 small rockmelon, halved and deseeded
- 1 small honey dew melon, halved and deseeded
- 4 small cos lettuces
Avocado Oil Dressing
- grated rind and juice 3 limes
- 1 Tbsp minced fresh ginger
- 2 Tbsp honey, manuka is nice here
- 4-6 Tbsp avocado oil
- 2 Tbsp chopped fresh ginger
- salt and pepper to season
Method
- Cook the shelled prawns in hot butter and oil in a frying pan until just cooked. Season with salt and pepper. Cool.
- Halve, stone and peel the avocadoes and slice thickly. Cut the melons into thick pieces. Cut the cos lettuce into thick slices.
- Arrange the prawns, avocado slices, melon pieces and cos lettuce in a bowl and pour over the dressing just before serving.
Avocado Oil Dressing
- Put all the ingredients into a screw top jar and shake to combine. Season well with salt and pepper. Makes 1½ cups.
