Wonderfully light and just perfect for a weekend breakfast or brunch. These are nice served with manuka or rewarewa honey in place of golden or maple syrup for a change.
Ingredients
- about 700 grams floury potatoes
- 4 eggs
- 6 tblsp cream
- ΒΌ cup flour
- salt and pepper
- butter for pan-frying
Spiced Apple Sauce
- 4 cooking apples
- 1/4 cup water
- 1/4 cup honey
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 2 tblsp raisins
- honey to accompany
Method
- Peel potatoes and cook in boiling, salted water until tender. Drain and mash. Set aside.
- Combine 2 cups of the mashed potato with 2 whole eggs and 2 egg yolks, the cream and flour, and season with salt and pepper.
- Whisk the remaining 2 egg whites until stiff then carefully fold into the potato mixture with a metal, slotted spoon.
- Heat a little clarified butter in a heavy-based frying pan. Cook tablespoonfuls of potato batter until golden, turning once.
- Serve with Spiced Apple Sauce and rashers of crispy bacon, drizzled with honey.
Spiced Apple Sauce
- Peel, core and slice apples, combine with water, honey, cinnamon, cloves and raisins. Simmer gently until the apples are tender and just starting to break up. Serve warm.
