Ingredients
- ¾ cup semolina
- 500 grams (about 3 large) potatoes
- 2 cups milk
- 2 eggs
- Quick savoury sauce
- 425 gram tin savoury tomatoes
- 2 tablespoons chopped fresh herbs or 1 teaspoon dry herbs
Method
- Peel the potatoes and cook in boiling water. Drain well and mash.
- Add the semolina, milk and eggs and beat well. Season with pepper, salt and nutmeg and cook over a moderate heat, stirring contantly for 5 minutes until the mixture becomes quite thick. Allow to cool.
- Roll into balls and flatten into patties, then dust in flour or extra semolina.
- Panfry in a little butter or oil. Serve hot with the sauce.
- Quick savoury sauce
- Empty the tin into a saucepan and simmer for 5 minutes. Add the herbs and season with pepper.
