Here I’ve taken the flavours of pizza: cheese, tomatoes, olives, oregano and hot pepperoni sticks and turned them into fabulous small pies.
Ingredients
- 1 cup grated cheese such as cheddar or mozzarella
- ½ cup grated parmesan cheese (or use cheddar)
- 190 gram packet feta cheese, crumbled
- 150 gram pepperoni-style sausage, diced
- ½ cup chopped semi-sundried tomatoes
- about 12 olives, chopped (can be green or black)
- 2 tblsp chopped fresh oregano or use 1 tsp dried
- 1-2 tsp minced garlic
- pepper to season
- 1 packet (5 sheets) Savoury Short pastry, defrosted
Method
- In a bowl mix together the grated cheeses, feta cheese, sausage, semi-dried tomatoes, olives, oregano, garlic and pepper. It should form a crumbly-style paste.
- Using the pastry sheets while they are cold, as once they get too warm, they are difficult to handle, return to the fridge to chill for 5 minutes. Cut them into 15 x 11cm rounds and 15 x 8.5-9cm rounds.
- Place a large spoonful into the center of each larger round. Brush the edges with beaten egg to glaze. Place the smaller pastry circle on top of the filling; it must be in the centre. Bring the edge of the bottom or larger pastry round up and pinch into small pleats around the top pastry circle to securely seal the filling inside. To my mind they look a bit like an ecclesiastical hat or sorts! Brush with beaten egg to glaze and place on a greased baking tray.
- Bake at 200 degrees Celsius for 25-30 minutes until golden. Serve warm.
