Nobody will ever guess that this cake is sugar and fat reduced.
Ingredients
- 2 cups wholemeal flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp mixed spice
- 439 gram can crushed pineapple in syrup (unsweetened)
- 1 cup orange juice
- ½ cup dried apricots
- 1½ cups chopped dates
- grated rind one orange
- ¼ cup light olive oil or melted butter
- ½ cup whole almonds
Method
- Mix the flour, baking powder, baking soda and spice together in a bowl.
- Simmer the pineapple with syrup, orange juice, dates, apricots and orange rind together for 5 minutes until mushy. Cool well.
- Stir gently into the dry ingredients with the oil or butter.
- Turn into a well-greased and paper-lined 20cm square cake tin. Arrange the almonds on top.
- Bake at 160ºC for 50 minutes. Cool for 10 minutes before turning out on to a cake rack to cool completely.
