The Calder twins pack these easy-to-make, energy-dense cookies into the snack box, enjoying them after their rowing sessions.
Ingredients
- 2 cups peanut butter (crunchy is best)
- 2 cups caster sugar
- 2 eggs, lightly beaten
Method
- Preheat the oven to 180ÂșC. Lightly grease or line 1-2 baking trays with baking paper.
- In a bowl work together the peanut butter, sugar and eggs. Place tablespoonfuls of mixture on the prepared trays. Gently press down each cooking with the back of a fork.
- Bake in the preheated oven for 15 minutes or until the edges of the cookies are deep brown and the cookies themselves are a gentle golden brown.
- Stand on the tray for 5 minutes before transferring to a cake rack to cool. Keep in an airtight container.
