Ingredients
- 1 cup starchy mashed potatoes
- 3 spring onions, trimmed and finely chopped
- 3 rashers bacon, diced and cooked
- 8-12 oysters, roughly chopped
- 2 eggs
- ΒΌ cup self-raising flour
Method
- Gently mix together the potatoes, spring onions, bacon, oysters, eggs and self-raising flour. Season with pepper and salt.
- Cook large spoonfuls of mixture in a hot, well-greased frying pan for about 2-3 minutes each side until the fritters are golden and heated through. Serve with salad greens and plenty of Worcestershire Sauce to accompany.
Cooks Tips
- Fresh oysters, rather than tinned are best here. Pacific and rock oysters are in season from March/April until November. - In place of mashed potatoes, use mashed golden kumara and add a little grated ginger (about 1 teaspoon) for additional flavour.
