This simple idea is sure to earn great raves from friends. It's ideal for a dinner party or even as a barbecue.
Ingredients
- 1 kilogram baby new potatoes
- ¼ cup olive oil
- 3-4 large, juicy cloves garlic
- 2 tablespoons dried tomato paste
- ¼ cup chopped fresh herbs
- ground pepper and sea salt
Method
- Wash the potatoes and place them in a roasting dish with the olive oil and crushed (but not peeled) cloves of garlic.
- Bake at 190ºC for about 1 hour until well done. Toss frequently to ensure even browning of the potatoes.
- Remove from the oven and drain of excess oil, leaving 1 tablespoon behind. Add the tomato paste, pepper and salt and toss well. Transfer to a serving dish and garnish with fresh herbs. Serve hot or cold.
