
Ingredients
- 2 cups water
- 2 cups orange juice, strained
- 2x 340 gram packets pitted prunes
- 2 tablespoons dark rum
- ½ cup brown sugar
- 4 tablespoons toasted flaked almonds to garnish (optional)
Method
- Put the water and orange juice into a saucepan with the prunes and simmer gently for 30 minutes until the prunes are plump.
- Add the rum and brown sugar and stir only until the sugar has dissolved.
- Remove from the heat and cool. Refrigerate until ready to serve. Can be served warm or cold, garnished with toasted almonds.
Cooks Tips
- Toast flaked almonds at 180ºC for 5-6 minutes until golden.
