Easy to make anytime of the year and perfect with cheese atop a cold meat sandwich, or with grilled sausages as a simple family meal.
Ingredients
- 4 large onions, peeled
- ½ cup oil
- 2 tablespoons minced garlic
- grated rind and juice 2 oranges
- 1 teaspoon ground coriander
- 1 teaspoon mixed spice
- 1 cup brown sugar
Method
- Slice the onions thinly. Heat the oil in a large frying pan and add the onions and cook over a moderate heat for 15 minutes until the onions are soft, stirring regularly to prevent burning.
- Add the garlic, orange rind and juice, ground coriander, mixed spice and brown sugar and cook a further 10 minutes until the mixture is thick.
- Bottle in hot sterilised jars and cover. Seal when cold.
