Ingredients
- 500 grams button mushrooms, diced
- ½ cup diced shallots or onion
- 2 tblsp oil
- 1 tsp minced garlic
- 2 red chillies, deseeded and sliced
- 3 cups chicken stock
- ¼ cup dark soy sauce
- 2 cups well-packed spinach leaves, stems removed
- salt and pepper to season
Method
- Cook the mushrooms and shallots in the oil in a saucepan until the mushrooms have browned a little.
- Add the garlic, chillies, stock and soy sauce, and simmer gently for 5 minutes.
- Add the spinach leaves and simmer only until the spinach has wilted. Season with salt and pepper if wished.
