It is the lemon butter icing that really makes these delicious morsels the mouth-watering sensation we've come to know and love.
Ingredients
- 275 grams butter, softened
- ½ cup icing sugar
- 1 teaspoon vanilla essence
- 1½ cups pure flour
- ½ cup cornflour
- 1 quantity lemon butter icing (see recipe on this website)
Method
- Preheat the oven to 160ºC. Lightly grease 1-2 baking trays or line with baking paper.
- Beat the butter, icing sugar and vanilla essence together until light and creamy.
- Sift together the flour and cornflour and mix into the creamed mixture. Do not overmix.
- Roll teaspoonfuls into balls and place on the prepared baking tray.
- Dip a fork into flour and shake off the excess. Flatten the dough balls gently by pressing with the tines of the fork. Dip the fork into the flour as needed.
- Bake in the preheated oven for 18-20 minutes until the biscuits are firm and beginning to brown a little around the edges.
- Transfer to a cake rack to cool. Once cold, join with the lemon butter icing.
