Ingredients
- 500 grams starchy potatoes, peeled
- 25 grams butter
- ¼ cup cream or whole milk
- 1 cup grated cheddar cheese
- ¼ cup chopped chives
- Salt and ground white pepper to taste
Method
- Cut the potatoes into even-sized pieces and cook in boiling salted water for around 12-15 minutes or until tender. Do not over cook as the potatoes will fall to pieces and make a watery mash.
- Drain and return the potatoes in the saucepan to a very low heat. Add the butter and cream or milk, cheese, chives and mash. Beat the potatoes well with a wooden spoon until light and fluffy. Season to taste with salt and white pepper and serve immediately.
