Ingredients
- 4 even sized golden kumara
- 2 tsp salt
- 2 tbsp oil
- 400 grams minced lamb
- 1 tbsp each minced garlic and ginger
- 1 tbsp curry paste
- 2 tomatoes, very finely chopped
- ½-1 cup grated cheese
Method
- Rub the well-washed kumara with salt and half the oil and place in a 190ºC oven for 40-50 minutes or until tender.
- Heat the remaining oil in a frying pan and brown the mince over a high heat. When brown, add the garlic, ginger and curry paste and cook a further minute.
- Add the tomatoes and simmer for 10 minutes until the mixture is very thick.
- Slice the top off each cooked kumara and scoop the cooked kumara into a bowl. Add the mince and mix together roughly. Return the filling to the kumara shells and then sprinkle each with a little grated cheese.
- Return to the oven for 10 minutes or until golden. Serve with your favourite chutneys.
