Gumbo is a Creole speciality from New Orleans. It's a thick stew-like dish with vegetables
Ingredients
- 2 tblsp Oil
- 2 onions, peeled and chopped
- 3 stalks celery, chopped
- 1 large red pepper, cored and chopped
- 100 grams hot salami, diced
- 1/2 tsp each of cayenne pepper, white pepper, black pepper, dried thyme and oregano
- 300-500 grams diced chicken
- 2 x 500 gram bottle Five Brothers Oven Roasted Garlic with Wine Pasta Sauce
- 4 cups chicken stock
- 1/2 x 500 gram Packet macaroni noodles
- 0 salt and pepper to season
Method
- Heat the oil in a large saucepan and cook the onions, celery, red pepper and salami over a moderate heat for 3-5 minutes.
- Add the spices, peppers, thyme, oregano and cook for a further minute, stirring constantly.
- Add the chicken and toss until browned lightly. Add the Five Brothers Oven Roasted Garlic with Wine Pasta Sauce and chicken stock and simmer 5 minutes. Add the macaroni and cook for 8 minutes. Season with salt and pepper.
- Serve in large bowls with crusty bread to accompany.
