Ingredients
- ½ cup sweet white wine, boiling
- ¼ cup sugar
- 1 565-gram can lychees in syrup, chilled
- 1 tablespoon minced fresh ginger
Method
- Stir the boiling wine with the sugar until dissolved. Cool.
- Place wine syrup into a food processor with the lychees and syrup from the can, and ginger.
- Process for 2 minutes or until very smooth. Pour into a 3 cup-capacity, freezer-proof container and seal or cover.
- Freeze for 4 hours. Remove from the freezer and mash or pulse in a food processor to evenly blend the semi-frozen mix. Return to the freezer and freeze overnight or until firm and frozen.
- Run a spoon over the frozen mixture and place scoopfuls of the granite-like ice into glasses to serve. Try with sliced strawberries or other summer fruits of your choice if desired.
