So, so easy and so delicious. A family or flatters meal in minutes.
Ingredients
- 4-5 cloves garlic, crushed, peeled and mashed to a paste
- 100-150 grams butter, softened
- grated rind and juice of one lemon
- generous amount of freshly ground black pepper
- salt
- 4 chicken leg and thigh portions, also called Marylands
- 4-5 starchy potatoes, such as Agria, peeled and cut lengthwise into quarters
Method
- Preheat the oven to 190 degrees Celsius. Line a shallow baking tray with baking paper
- Mix the garlic, butter, and lemon rind together with a generous seasoning of salt and freshly ground black pepper. Set half of the butter aside in a small frying pan or saucepan, melt and set aside.
- Separate the skin from the chicken portions and spread one-quarter of the softened garlic butter between the skin and meat of each portion. Place the chicken portions onto the prepared tray.
- Turn the prepared potato quarters in the melted butter and scatter around the chicken pieces. Pour any remaining butter on top, along with the lemon juice.
- Bake in the preheated oven for 30-40 minutes, Time will depend on the size of the chicken and potato portions. Delicious.
