
Traditionally filled with jam, for a change use lemon butter. The pairing of lemon and mace is particularly nice.
Ingredients
- 125 grams butter
- ½ cup caster sugar
- 1 egg
- grated rind 2 lemons
- 1 cup flour
- 1 cup cornflour
- 1 teaspoon baking powder
- 1 teaspoon ground mace or nutmeg
- ½-¾ cup lemon honey or lemon butter
- icing sugar for dusting
Method
- Beat the butter and sugar together until creamy. Add the egg and lemon rind and beat well.
- Sift together the flours, baking powder and mace or nutmeg and stir in.
- Place heaped dessertspoonfuls of mxiture onto a greased baking tray.
- Bake at 180ºC for 12-15 minutes until the cookies are firmish to the touch and have begun to brown lightly. Cool on a cake rack.
- Join two similar shaped cookies together with lemon honey and dust with icing sugar to serve. Store in an airtight container.
