Lemon Fudge Slice

If you like lemon honey then you will love this one. Dust well with icing sugar last before serving and serve with cream and fresh fruits. It

Ingredients

Base

  • 1¼ cups flour
  • 125 grams butter
  • 2 tblsp sugar

Filling

  • 150 grams butter, melted
  • ½ cup lemon juice
  • 2 lemons (grated rind)
  • 5 eggs
  • ½ cup caster sugar
  • icing sugar to dust with

Method

  1. Put the flour, butter and sugar into a food processor and process until the mixture resembles coarse crumbs. This can also be done by hand, by rubbing the butter into the dry ingredients.
  2. Press the mixture into the base of a lined 24 cm cake tin. Bake at 180 degrees Celsius for 30 minutes until golden. While cooking prepare the filling.

Filling

  1. Beat the butter, lemon juice, lemon rind, eggs and caster sugar together well.
  2. Pour the filling over the hot base and return to a 160 degrees Celsius oven for 25-30 minutes or until the filling has set. Cool and dust with icing sugar to serve.
