Simply one of my all-time favourites.
Ingredients
- 50 grams butter, softened
- ½ cup caster sugar
- 2 large lemons, grated rind
- 2 eggs, separated
- ¼ flour, sifted
- 1 cup milk
- ¼ cup freshly squeezed lemon juice
- icing sugar to serve
Method
- Beat the butter, sugar, lemon rind and egg yolks together until light and fluffy. Gently stir in the flour, milk and lemon juice.
- Put the egg whites in a clean bowl and beat until they form stiff peaks but are not dry.
- Fold the two mixtures together and pour into a well-greased 3-4 cup capacity ovenproof dish.
- Bake at 160ºC for 30-35 minutes in a water-bath until the top is golden and firm to the touch. Serve dusted with icing sugar and accompanied with ice cream for a delicious dessert.
Cooks Tips
- Use a mix of limes and lemons or try an orange version with 2-3 tablespoons of flaked almonds added. - A water bath is also known as a bain marie.
