Ingredients
- 2 slices wholemeal bread
- ½ cup red wine
- 500 grams minced lamb
- 1 onion, peeled and finely chopped
- 2 cloves garlic, peeled and chopped or 1 teaspoon minced
- 3-4 dried tomatoes in oil with 2 tablespoons of the oil
- 1 teaspoon cracked pepper
- ¼ cup chopped parsley
- 100 grams diced feta cheese
- ¼ cup chopped stuffed olives, optional
Method
- Crumb the slices of bread and soak with the wine for a few minutes while you collect the other ingredients.
- In a bowl, mix together the soaked breadcrumbs, minced lamb, onion, garlic, tomatoes and oil, pepper, parsley, feta and olives.
- Make into 8 large patties (place in an airtight container until required, stacked with plastic wrap or baking paper between the layers). BBQ over a moderate heat for 15-20 minutes so the patties are medium-rare and not blackened. Serve in a toasted bun or on slices of grilled fresh ciabatta loaf with summer vegetables.
