These Patties would be perfect to serve for lunch or a casual dinner.
Ingredients
- 750 grams kumara, peeled and chopped
- 1 small onion, peeled and finely chopped
- 1 tsp curry powder
- 340 gram can corned beef, chilled
- 227 gram can crushed pineapple in juice, very well drained
- 1/2 cup grated cheddar cheese
- 1 egg
- 1/4 cup Worcestershire sauce
Method
- Cook the kumara in boiling salted water until tender, drain and mash.
- Cook the onion in a dash of oil in a frying pan until soft but not coloured. Add the curry powder and cook for a further minute.
- Add the onions to the kumara with the corned beef, pineapple, cheese, egg and Worcestershire sauce and mix well. Flake in the corned beef and fold through gently.
- Shape into 8 even-sized patties and pan fry in a little oil for 6-7 minutes until hot and golden, turning once.
- Serve topped with a quick salsa prepared from diced tomato, celery and chopped parsley. Accompany with your favourite brunch or lunch ingredients.
