Ingredients
- 2 x 23 cm pre-made pizza bases
- 350-500 grams hot smoked salmon, flaked
- 1 cup of your favourite Italian-style tomato pasta or pizza sauce
- 2 tblsp sundried tomato pesto
- 300 grams bocconcini cheese, sliced
- 1 chargrilled red pepper, sliced
- ¼ cup oregano leaves
- ½ cup chopped black olives
- ½ cup semi-dried tomatoes in oil, well drained and finely chopped
Method
- Brush the pizza bases with oil. Mix together the tomato sauce with the sundried tomato pesto.
- Spread each pizza with half the tomato mixture. Top with half the flaked salmon, bocconcini slices and red pepper slices.
- Bake at 230ºC for 12-15 minutes until golden and the cheese has melted. Sprinkle each pizza with half the oregano leaves, olives and semi-dried tomatoes. Serve drizzled with olive oil if wished.
Cooks Tips
Variation: If you're cooking for two, halve the ingredients and make one large pizza. Alternatively, you may prefer to make individual pizzas - instead of pizza bases, try mini pita breads which only require about 8-10 minutes cooking time and come up lovely and crispy. Serve with a fresh green salad.
