Ingredients
- 8-10 medium-sized kumara
- oil
- 4 tablespoons honey
- 1 teaspoon ground nutmeg
- grated rind of 1 orange
- salt and freshly ground black pepper
Method
- Peel the kumara. Cook for 5 minutes in boiling water. Drain and toss in oil.
- Fan bake at 200ºC (220ºC without fan) for 30-40 minutes until tender.
- Toss in honey, ground nutmeg and the grated rind of the orange. Season well with salt and pepper.
