An easy way to finish a meal with a flourish.
Ingredients
- 1 cup mixed berries (eg blueberries, raspberries and blackberries)
- 1-2 tblsp gin
- 2 tblsp icing sugar
- 300 grams mascarpone
- 2 tblsp brown or demerara sugar
Method
- Toss the berries, gin and icing sugar together and pile into four 3/4-cup ramekins. Set aside for 1 hour.
- Spoon the mascarpone over the fruit and then sprinkle with brown sugar.
- Grill under a high heat until the sugar has begun to brown and the mascarpone is slightly melted. Serve with crisp dessert biscuits.
