Serve this fish with a nice crisp salad or your favourite green vegetables.
Ingredients
- 4 x 150 gram white fish fillets, skinned
- ½ cup good thick mayonnaise or aioli
- grated rind one lime or 1/2 lemon
- 1 tablespoon lime or lemon juice
- 2-3 gherkins, finely chopped
- 1 tblsp each finely copped chives and coriander or parsley
- ¼ tsp minced chilli paste
- ¼ cup breadcrumbs - fresh or panko
- ½ cup grated cheddar cheese
Method
- Place fish on a baking paper-lined tray.
- Combine mayonnaise, lemon juice and rind, gherkins, chives, coriander and chilli paste or powder and spread evenly over the fish fillets.
- Mix the cheese and breadcrumbs together and sprinkle on top.
- Fan grill at 180°C until the fish is tender and the cheese coating is crisp and golden.
