Frisco Grilled Fish

Frisco Grilled Fish

Serve this fish with a nice crisp salad or your favourite green vegetables.

Ingredients

  • 4 x 150 gram white fish fillets, skinned
  • ½ cup good thick mayonnaise or aioli
  • grated rind one lime or 1/2 lemon
  • 1 tablespoon lime or lemon juice
  • 2-3 gherkins, finely chopped
  • 1 tblsp each finely copped chives and coriander or parsley
  • ¼ tsp minced chilli paste
  • ¼ cup breadcrumbs - fresh or panko
  • ½ cup grated cheddar cheese

Method

  1. Place fish on a baking paper-lined tray.
  2. Combine mayonnaise, lemon juice and rind, gherkins, chives, coriander and chilli paste or powder and spread evenly over the fish fillets.
  3. Mix the cheese and breadcrumbs together and sprinkle on top.
  4. Fan grill at 180°C until the fish is tender and the cheese coating is crisp and golden.
