This dessert will bring back memories for many - and please all ages.
Ingredients
- 2 cups raspberries (fresh or frozen)
- 2-3 tblsp icing sugar
- 1 litre good quality vanilla icecream
- 4 juicy, very ripe peaches
- fresh mint sprigs to garnish
Method
- Reserve half a cup of the raspberries.
- Puree the remaining raspberries in a food processor or blender, sweeten with sugar to taste then sieve to remove pips.
- Slice peaches into wedges.
- Pour a little raspberry sauce into the bases of 4 tall sundae glasses. Layer with vanilla icecream and peaches.
- Pour over the remaining raspberry sauce.
- Decorate with reserved raspberries and mint sprigs.
Cooks Tips
- Canned peaches can be used in place of fresh peaches.
