Brunch is an ideal time to have friends in and these delicious little crab cakes are wonderful accompanied with crusty bread and a glass of chilled white wine.
Ingredients
- 500 grams fresh crab meat, well drained
- 1 cup fresh white breadcrumbs
- 2 eggs
- 2 tblsp each chopped chives, parsley and basil
- ¼ cup mayonnaise
- 1-2 long red chillies, deseeded and very finely diced
- grated rind and juice of 2 limes
Lime mayonnaise
- ½ cup mayonnaise
- grated rind and juice of 1 lime
Method
- Toss together the crab meat, breadcrumbs, egg, chives, parsley, mayonnaise, chilli, lime rind and juice. Refrigerate for one hour.
- Shape ¼ cupfuls into patties or small cakes and pan-fry in hot oil or butter, turning once.
- Serve the crab cakes warm with rocket and the lime mayonnaise.
Lime mayonnaise
- Combine the ingredients together.
Cooks Tips
- Fresh frozen or canned crab meat may be used here. If using tinned crab, you'll need 3-4 x 170 gram cans. (If necessary after draining, give the crab meat a squeeze to remove extra liquid. The tinned crab will contain more liquid).
