Ingredients
- 150 grams butter, softened
- 2/3 cup sugar
- 1 teaspoon vanilla essence, optional
- 3 tablespoons warm milk
- 1 tablespoon golden syrup
- ½ teaspoon baking soda
- 2 cups flour
- 1 teaspoon baking powder
- 1 cup sultanas or chocolate chips
Method
- Preheat the oven to 160ºC and grease or line one to two baking trays.
- Beat together the butter, sugar and vanilla essence if using, until the mixture looks pale in colour. You can do this with a bowl and wooden spoon, or by using an electric mixer. Stir together the warm milk, golden syrup and baking soda - it will become thick - and gradually beat into the creamed mixture.
- Sift the flour and baking powder together and work into the creamed mixture with the sultanas or chocolate chips.
- Roll dessertspoonfuls of mixture into balls and place on the prepared trays, leaving room for spreading. Flatten biscuits with a fork.
- Bake in the preheated oven for 10-12 minutes, or until the biscuits have become a light sandy brown colour. Transfer to a cake rack to cool. Store in an airtight container. These biscuits will keep well for 2-3 weeks.
