These are a great muffin to serve at a Halloween party.
Ingredients
- 1½ cups self raising flour
- ½ cup caster sugar
- ¼ cup cocoa
- 1 tsp baking soda
- ½ cup chocolate chips
- 1 cup milk
- 1 egg
- ½ cup yoghurt
- 50 grams butter, melted
Icing
- 2 tablespoons cocoa
- 2 tablespoons boiling water
- 100 grams butter, softened
- 1½ cups icing sugar
- few drops vanilla essence
Method
- Preheat the oven to 190ºC and place the cake rack in the centre. Line 12 standard muffin tins with paper patty cups.
- Sift the flour, sugar, cocoa and baking soda into a large mixing bowl. Stir through the chocolate chips and make a well in the centre.
- In a jug blend together the milk, egg, and yoghurt.
- Pour into the well and, with a holed spoon, stir gently, folding in the butter to make a smooth batter. Divide the mixture evenly among the paper patty cups.
- Bake in the preheated oven for 20 minutes or until cooked. They will be firm to the touch. Cool before icing with Chocolate Butter Icing and decorating with witches hats.
Chocolate Butter Icing
- Stir the cocoa into the boiling water to make a smooth paste and leave to cool. Beat the butter and cooled cocoa mixture until fluffy. Sift in the icing sugar and beat into the creamed butter with the vanilla essence and a little extra milk if required o make a smooth icing.
