A citrus salad makes a refreshing match to BBQ food. The dressing with its touch of Tequila adds a little punch to this salad.
Ingredients
- 2 oranges
- 1 pink grapefruit (optional)
- 3-4 spring onions, trimmed and sliced
- 200 grams cherry tomatoes, halved
- 1 tblsp chopped jalapeno chillies
- 2 tblsp chopped fresh coriander
- 2 tblsp chopped fresh mint
- 2-3 cups rockets leaves
- 4 tblsp lime juice
- 2 tsp grated lime rind
- 2 tblsp Tequila
- 3 tblsp olive oil
Method
- Grate or zest the rind from the oranges. Cut away the thick white pith and then segment or dice the flesh.
- Cut the rind and bitter white pith from the grapefruit and dice or segment the flesh.
- Toss together the oranges, grapefruit, spring onions, cherry tomatoes, chillies, herbs and rocket with the dressing. Serve chilled.
Dressing
- Stir all the ingredients together; season with salt and white pepper if wished.
Cooks Tips
- Occasionally we can buy fresh jalapeno chillies. If unavailable use well-drained bottled ones or dried jalapeno chillies that have been reconstituted in cold water.
