These very special cookies would make a lovely Christmas gift.
Ingredients
- 1 cup pecans
- 125 grams butter
- 1/2 cup caster sugar
- 1 egg
- 3/4 cup flour
- 1/4 cup cornflour
- about 24 pecan halves to decorate
Method
- Toast the pecans in a 180°C oven for 8-10 minutes until browned. Cool and then chop finely in a food processor.
- Beat the butter and sugar together until light and fluffy. Add the egg and beat well.
- Stir in the pecans, flour and cornflour, and mix well.
- Place large teaspoonfuls on to a well-greased baking tray and place a pecan half on top of each cookie.
- Bake at 180°C for 10-12 minutes until they begin to brown around the edges Cool on the tray for 3-5 minutes before transferring to a cake rack to cool. Store in an airtight container. Dust with icing sugar before serving or wrapping up as a gift.
