Leave some out for Santa!
Ingredients
- 360 gram packet orange cake mix
- ½ cup coconut
- 2 eggs
- 50 butter, melted
- grated rind of one orange
- 2 tblsp orange juice
- 400 gram pottle Christmas Fruit Mince
- icing sugar to dust
Method
- In a mixing bowl blend together the cake mix, coconut, eggs, butter, orange rind and juice.
- Spread into a 20cm x 30cm greased and paper lined slice tin.
- Dot the Christmas fruit mince on top. Bake at 180°C for 35-40 minutes until cooked.
- Cool in the tin before cutting into slices to serve, dusted with icing sugar. Serve hot with cream as a dessert if wished or cold as a slice. Keep in an airtight container.
