Rich, decadent chocolate tiramisu layered with poached pears. Delicious. For a quick tip, use canned pears.
Ingredients
- 4 egg yolks
- 6 tblsp caster sugar
- 150 grams dark chocolate, melted and cooled
- 2 cups mascarpone
- 250 gram packet sponge finger biscuits
- 3 poached pears, thickly sliced
- 1 cup strong black coffee
Method
- In a bowl beat together the egg yolks, caster sugar, cooled melted chocolate and mascarpone. Refrigerate until ready to use.
- Line a 6-cup-capacity loaf tin with baking paper or plastic wrap. Dip the sponge finger biscuits in the dark coffee quickly and place a single layer over the base of the loaf tin.
- Spread over a thin layer of chocolate mascarpone and then a layer of pears. Cover with a layer of chocolate mascaprone. Repeat the layers finishing with a single layer of sponge finger biscuits. Refrigerate for 4 hours.
- Turn upside down onto a long serving platter and sift over a thin covering of icing sugar or cocoa and decorate with grated chocolate before slicing thickly to serve with coffee.
